Heat gently 160 ml of spring water until it reaches the boiling point.
Squeeze the ½ lemon and add the juice and the sugar to the boiled water, mix together and let the mixture rest for 30 min.
Wash the blackberries, place them in a jug and add 175 ml of spring water and use a hand blander to mix all ingredients until your reach a puree.
Add the water/sugar/lemon and mix vigorously with a whisk.
Batch freeze the mix using the gelato maker and following the manufacturer’s instructions.
